The 250 Calorie Lunch


This is what I eat for lunch every day. Sometimes the veggies change (snap peas, bell peppers, peas, etc.) and the fruit (apple, pear, peach, grapes, banana, mango, etc.) But overall, it's a very filling plate, and only 250 calories! I absolutely love yoplait light yogurt. I should be a spokesperson for them, I eat one every day because I'm not a big milk fan, so it's my main source of calcium. Occasionally I have hummus instead of the light sour cream/ranch dip, but it's a bit more calories/fat, so I will change my dinner accordingly.

  1. I should know this but how much (tablespoons) of the light sour cream/ranch dip do you use? Also is the dip the kind you mix the powder ranch dip into sour cream?

    This lunch sounds good. I get so tired of frozen dinners and I need more veggies anyway.

    Also I figured that the apple, peach, pear, etc would just be one but how many grapes would you do (I guess I could google how many caleries per grape, but a little lazy today).

    Thanks for your help. I really like this blog. I am really trying to get back on the band wagon and I need all the motivation I can get.

  3. heather - i use 1 tbsp. light sour cream and 1/2 tsp. ranch dip powder mix. it comes out to about 35 calories, so you can sub any dip that's 35-50 calories to stay in the range. it probably differs by a bit each day depending on the food, i count out 25 grapes or 20 cherries.

  4. Thanks. I am going to do that for lunch for a while. I would rather have a nicer dinner since I want to cook dinner for hubby than to have a nice lunch. This would fill me up and also be healthy.
